1. Weigh out all the ingredients, rough chop and dice all the vegetables and chop the Brazil nuts
2. Put all the ingredients except the oil into the food processor, pulse to combine and then add the avocado oil. Blend to combine for about 30 to 60 seconds, until smooth
3. Best serve fresh as a wrap or sandwich spread, or use as a dip. Store in an airtight container in the refrigerator for 2 to 3 days. Enjoy!
